The 2,500-sf, 94-seat restaurant is at 9563 S. University Blvd, adjacent to a Starbucks and across the parking lot from a King Soopers grocery store. Highlands Ranch in Douglas County is the largest master-planned community in the Denver metropolitan area."Our Colorado customers have been requesting a Highlands Ranch location since we opened our first restaurant in Cherry Creek," Aaron Kennedy, president and founder of Noodles & Co., told GlobeSt.com.
Kennedy says expansion plans are predicated upon customer demand, which he has previously said will drive a new opening every couple of weeks. By year's end, Noodles & Co. will open a location at 16 Market Square in Lower Downtown Denver and two locations in Chicago, a new market for the chain.
