Baja Fresh Among New Crop of Quick Service Restaurants in Twin Cities

MINNEAPOLIS-Two local businessman plan to open more than 20 Baja Fresh restaurants here; other chains coming include Bear Rock Cafi, Pot Belly and Pei Wei.

MINNEAPOLIS-Baja Fresh Mexican Grill recently reached a deal with two Twin Cities businessmen to open more than 20 restaurants in Twin Cities market over the next five years.

The California-based restaurant chain is among the new quick service restaurant concepts scouting for locations in the Twin Cities, including Bear Rock Café, Pot Belly, Pei Wei and a number of others, said Chris Simmons, vice president in Welsh Cos.‚ retail brokerage division.
