The three-story restaurants will allow kids to go on dinosaur digs and talk to paleontologists. Steven Schussler, the creator and founder of Rainforest Café who has offices in Golden Valley, MN, calls it his latest "edutainment" concept. Rainforest Café also made its debut at Mall of America.

RED Development, which disclosed the planned openings last week, says at T-Rex "dinosaurs will come to life in extravagant theatrical settings including geysers, waterfalls and ice caves." The restaurant will have an eclectic food menu and retail area with more than 5,000 items.

Schussler plans to open T-Rex attractions in select, high-volume tourist locations throughout the world, with the first location opening at Mall of America in May 2005 and the second location opening at the Legends at the end of 2005. The Legend is a 750,000-sf destination development situated in the heart of Village West, the new retail and entertainment district in Kansas City, KS.
