SHAKOPEE, MN-Roundy's, which recently entered the Twin Cities market with its acquisition of Rainbow Foods, is debuting a new style of grocery store in the Twin Cities with the opening of its 70,000-sf Rainbow Foods supermarket here. There could be more to come.

The new store is the first new Rainbow store that Milwaukee-based Roundy's opened in the Twin Cities area. But company officials say they are searching for sites for three to five new stores.

Roundy's bought Rainbow's 31 Twin Cities stores two years ago out of Chapter 11 bankruptcy from Fleming Cos. The Shakopee store makes 32. Rainbow also is building a slightly smaller supermarket in Lakeville that is expected to open by June.

Among the possible locations are St. Paul and Minneapolis for new stores as well as the fast-growing suburbs. Roundy's, which recently completed about $3 million in renovations at each of its Eagan and Apple Valley stores, also hopes to do major remodeling of about four or more Rainbow stores this year.

Rainbow is trying to be an upscale supermarket discounter. The store includes an adjacent 1,500-sf liquor store, a first for the Rainbow chain.

Roundy's also operates nearly 100 locations under the Pick n' Save and Copps Food Centers banners in Wisconsin. The most direct competition for Rainbow is Cub Foods, which has about 50 stores in the Twin Cities area. Target Corp. has opened several of its SuperTarget grocery and discount store combinations in the Twin Cities area and Wal-Mart recently confirmed plans to enter the market with its super stores.
